It has everything!
Great characters, hilarious comedy, references to geek/otaku/pop culture up the yin-yang
and a surprisingly touch-the-heart depth to the story.

Mine's Robotech.

It was the first complete anime series I've ever watched and it had such an impact on the anime community that people can't deny its contribution.

Call it a two-bit hack job, but I truly believe anime wouldn't be as popular as it is if it weren't for Robotech.

So much good nostalgia....good times.

Obvious, but.... Cowboy Bebop. no other anime series has had a bigger influence than Bebop.

Fullmetal Alchemist.

No Anime has made me laugh, cry, and feel for the characters like FMA.
It was the perfect Anime.

I would assume no other anime series has had a bigger influence in your life than Bebop...cause I know several anime off the top of my head that has had far more influence in the anime community.

Bebop, I cried like a baby at the end of that one, that and Wolf's Rain XD I'm a huge crybaby when it comes to dramatic anime. Like FMA, I was messed up for a week when....that one character died <.<

I just finished watching that series and while I thought it was a great anime, it was ridiculously short and felt kinda rushed near the end.

They really need to extend that series, though

I have volume 1 and 2 on DVD.
The first 10mins of the first episode put my whole 'shock value' collection to shame.
I don't know why but it never really hooked me.

FLCL is another great one, like Kitty pointed out. Definitely in my top 3. the pillows music alone made that show, for me, just explosively awesome. So it was icing on the cake that it was also a cool plot and had some great moments of WTFness.

My favorite? Dragon Ball hands down I love the series all the way up to GT. Far from being the best anime I love it because I grew up with it...I've been watching it before CN even aired it.

Another Personal Favorite is Saint Seiya.

Two of my fav. Japanese actors, Matsuyama Ken’ichi & Fujiwara Tatsuya, star in them as Light and L. The first one just got released in the U.S and the second should be following soon. I hope they also pick up on the spin-off film that was released a bit ago, it wasn't half bad, a bit off kilter from the previous two but still enjoyable if only for Matsuyama's performance, imo.

I love that series, even though it's short, it is really great. The love triangle of the story is humorous. The plot is sorta strange even for anime, however the climax of the story keeps rising. o_0

I really like Cowboy Bebop, Trigun, Pilot Candidate (aka: Candidate for Goddess), Card Captor Sakura, Yu Yu Hakusho, Tokyo Babylon, Kyo Kara maoh, Ouran, Full Metal Alchemist (<3), Dragon Ball, and Wolf's Rain

But I love Elfen Lied, Escaflowne, and Outlaw Star.

I'd say Rurouni Kenshin, but the manga is SO much better.
